Recipe 04: Be-Bulb Fluffy Pancakes
There is something comforting about a slow morning and a stack of warm pancakes.
Fresh off the pan, lightly spread with butter, drizzled with maple syrup, and topped with a spoonful of blueberry jam. Add a cup of freshly brewed Americano coffee, and you’ve just described one of my favourite breakfasts.
It’s simple.
Comforting.
And somehow, it always makes the morning feel a little brighter.
There are countless pancake recipes out there, but this is the one I keep coming back to. It’s quick to make, uses everyday ingredients, and never disappoints.
Why I Love This Recipe
If you’ve been following Be-Bulb for a while, you’ll know I have one small habit in the kitchen.
I like to keep the washing up to a minimum.
The fewer bowls and utensils I use, the happier I am.
That’s why I usually mix everything directly in a large measuring jug. It’s big enough for one batch and makes pouring the batter onto the pan much easier.
If you only have a mixing bowl, don’t worry. The pancakes will taste exactly the same.
A Few Tips Before You Start
A fluffy pancake starts with a thick batter.
It should be thick enough to pour slowly—not runny like custard. If your batter feels too thin, simply add a little more flour until you reach the right consistency.
You also don’t need to let the batter rest. The baking powder begins working when it meets the heat of the pan, so once everything is mixed, you’re ready to start cooking.
As for the pan, a non-stick skillet is ideal, but a cast-iron skillet works beautifully too. Just remember to butter it lightly. Too much butter burns quickly and can leave dark spots on your pancakes. A thin layer is all you need to achieve that lovely golden-brown colour.
Ingredients
- 1 cup all-purpose flour
- ½ teaspoon baking powder
- 1 teaspoon sugar (optional)
- ½ teaspoon salt
- 150 ml milk
- 1 egg
- Butter for serving
- Maple syrup
- Blueberry jam
Method
1. Heat the pan
Preheat your skillet over medium-low heat while preparing the batter. Keep the temperature consistent throughout the cooking process.
2. Mix the batter
Combine the flour, baking powder, sugar, and salt.
Add the milk and egg, then whisk everything together until smooth. The batter should be thick but still pourable.
3. Cook the pancakes
Lightly butter the skillet if needed.
Pour one portion of batter into the pan and cook until bubbles begin to appear on the surface and the underside is golden brown.
Flip carefully and cook the other side until golden.
Repeat until all the batter is used.
4. Serve
I like to spread butter on each pancake while it’s still hot before stacking them. The butter melts beautifully into every layer.
Serve with maple syrup, blueberry jam, fresh berries, or your favourite toppings.
Then…
Sit down.
Pour yourself a cup of coffee.
And enjoy every bite.
