Easy Banana Bread Recipe

Every time I see ripe bananas, I always make banana bread, because I really don’t like to waste food. I would rather bake it and freeze it so I can eat them later.

This recipe is so easy. You know how I like to keep my washing up to a minimum, so mixing all ingredient together in one bowl, it couldn’t get easier.

One note for you. If you want to make the bread fluffier, you can add another egg. This will make the bread into a cake consistency. If you like to have it a little dry, then use just one egg.

You can also bake this recipe in a muffin tin. This way you can have a separate portion already. Perfect for parties, or just a snack. Again, add another egg, if you want the consistency a little bit fluffier like a muffin.

Can you freeze the banana bread?

Of course, you can. But make sure it is completely cool down before you keep it in the freezer. You can even slice them and freeze separately so that it is easier if you just want to consume a slice or two.

You can defrost it in the microwave or toast it, or just leave it outside on your countertop overnight.

How to keep the bread moist?

I usually put it in microwave covered with a damp paper towel on it. This way will restore the moist back into the bread.

On the other hand, to keep your bread out of moist, wrap your bread with baking paper, than wrap it again with cling film. Do this if you want to keep your bread in the freezer.

Easy Banana Bread Recipe

I hate to see ripe bananas and nobody bothered to touch them because of the black dotted color. This recipe is so easy and you just need one bowl to mix. Save time to wash the dishes.

Equipment

  • Mixing bowl
  • A fork to mash the banana
  • Measuring Cup: ½ cup, ½ teaspoon, â…“ cup
  • Spatula
  • Bread Tin

Ingredients

  • 3 ripe bananas.
  • ¾ stick of melted butter.
  • 1 teaspoon of baking soda.
  • A pinch of salt.
  • â…“ cup of sugar. You can skip the sugar if you don't like it too sweet. Or you can substitute with any sweetening agent as you like.
  • 1 egg.
  • 1 teaspoon of vanilla powder or extract. Not Vanilla Essence.
  • 1½ cup all-purpose flour.

Instructions

  • Preheat oven at 175°C or 350°F.
  • Mashed 3 ripe banana in a large bowl. Add all other ingredients one-by-one, starting with melted butter, baking soda, a pinch of salt, sugar, vanilla, egg, and mix well.
    Note:
    You can skip the sugar altogether if you don't want it too sweet or you can exchange sugar with any sweetener agent to your liking. You can even add or reduce the sugar if you want.
  • Add all-purpose flour ½ cup at a time while continue mixing it all together. I like to mix it with a spatula so that it sweeps all the mixture together from the side of the bowl.
  • Butter lightly the bread tin and scoop all the mixture to the bread tin.
  • Baked in the oven for 40 – 50 minutes or until the center is completely baked. Normally I will poke the center of the bread with a toothpick or sharp knife. If it's dry, it means it's done.
  • That's it! You see how easy it is!
    Don't forget to let it cool, before you start cutting into it.
