Lock-Down Easy Banoffee Pie (No Bake)
I remember it was my first the second birthday celebration in Dubai that I decided to make this Pie. I was inviting some friends over and we had a spread of finger liking food at my dining table.
I needed a simple not too heavy but delicious dessert which I can poke a candle on top. For months I was craving for this pie and I cannot find toffee anywhere.
So I asked one of the pastry chef at the Hotel I used to work, and he shared me a recipe of how to make toffee. But… I cannot make it because it requires too many ingredients. Somehow, in the end he said, “Lia, I have a simple recipe on how to make toffee, cheap and easy, but it takes 4 hours!”
Oh well, I couldn’t agree more! Cheap and easy.

I use a pyrex pie pan or flan pan simply because it is easier and more presentable to serve. I can also use the same pan to make any other pies or Quiche and it is oven-proof.

Lock-down Easy Banofee Pie (No Bake)
Equipment
- Sauce Pan
- Flan Dish or Pie Dish
- Bowl for mixing the ingredients
- Mixer or a whisk
- Rolling Pin or anything heavy to crush the biscuits
Ingredients
- half bar Dark Chocolate To decorate. You can eat the other half.
- 400 grams Condensed Milk or just 1 regular Condensed Milk You can also use fat-free or reduced sugar condensed milk.
- 150 grams Digestives Biscuits
- 75 grams unsalted Butter
- 3 large Bananas Not the over-ripe banana, but also not waiting to ripe banana. Just a good sweat ripe banana.
- 284 ml carton of double cream
Instructions
- To make the toffee: Put the can of condensed milk, unopened, in a saucepan, cover with water, bring to boil. Remove the label from the can before boiling. Boil the can and let it simmer for 4 hours, top up with boiling water from the kettle as needed. After 4 hours remove and leave to cool. NOTE: DO NOT COVER THE PAN
- While you are waiting for the milk to caramelized, put the digestives biscuits in a clean plastic bag and crush with a rolling pin.
- Melt the butter in a small pan and add the melted butter to the crushed biscuits, mix, and press onto the base of a 20cm flan dish or pie dish. Chill in the fridge for 30 minutes.
- Once the condensed milk is ready, wait until the can is cold enough to handle. The milk should have turned into toffee paste by now. Spread this delicious toffee over the biscuit layer.
- Peel and thinly slice the bananas, and arrange in a layer over the toffee.
- Finally, whip the cream until it forms to a thick consistency and spread over the bananas. You can always use a mixer if you don’t feel like to burn some calories by whipping the cream by hands. Note: Make sure that your bowl is totally dry before you pour your cream to whip. If you have just a little drop of water or even if your bowl is damp, the cream will not thicken. And remember! Use double cream only. Single will not work either.
- Decorate with grated dark chocolate, on top. Let it cool down in the chiller for 30 minutes before you start serving them. Make sure the toffee is totally cool down. It would be much better to leave it overnight. I like to serve them cold.
- Now… try and take a piece of it…. you will feel heaven running through your throat…
